In addition to treating participants to a 5-course meal, these Farm-to-Table Cooking Classes aim at providing people with the tools, information, and techniques necessary to make local, seasonal cooking a positive and transformative experience.
Each class will revolve around the seasonal ingredients found on the menu. Matthew will discuss biological and cultural histories of ingredients, traditional flavor and ingredient combinations, ingredient specific cooking techniques (traditional and contemporary), plating suggestions, wine pairing suggestions, and local sources for ingredients.
Each participant will receive a course packet containing: recipes and wine pairing suggestions, list of seasonal foodstuffs, list of local food resources, descriptions of cooking techniques and insider tips, seasonal food factoids, list of important organizations in the sustainable food movement.
