  1. Hi Matthew,

    I’ve just got to tell you how your class last night has so inspired me. I learned so very much about your techniques: how to properly heat up a pan, how to slice apples and greens, how to roast squash, reduce braising liquid to make a sauce or stock to make a glace and so many other things I’m not remembering this moment to list. I learned exactly how to make your dishes and to plate them. I learned of the history of the dishes and of the ingredients. You were clear, positive, empowering. I’m gonna “glean” (sp?) some persimmons today to make your pudding cake (stupendous, like everything else you taught last night.)
