Traditional Chimichurri is made from finely chopped parsley, minced garlic, vegetable oil or olive oil, white or red vinegar, and red pepper flakes. Additional flavorings such as paprika (pimenton dulce), oregano, cumin, thyme, cilantro (coriander leaf), lemon, and bay leaf (laurel) can be added.


1 1/2 cups extra virgin olive oil

1/2 cup red wine vinegar

1 tsp salt

1/2 tsp pepper

1/2 tsp red pepper flakes

6 cloves garlic

1 bunch flat-leaf parsely

2 TBSP oregano

1/4 cup mint leaves


  • Very finely mince the herbs and garlic, combine all the ingredients in a container with a lid, shake well to combine.
  • Or combine ingredients in a food processor or blender and pulse until almost smooth.
  • Excellent as a marinade for (or served with) lamb, beef, or chicken.
